I'm constantly looking for an excuse to eat chocolate with minimal guilt. I find chocolate to be soothing to the soul.... at least it is for mine :) . Magickally speaking, a little chocolate is particularly helpful after a break up or to soothe the pain of a broken heart. Alternately, it is also great to have a little chocolate before getting amorous with someone special ;)
This recipe was developed out my love for chocolate.....and something to do with ricotta cheese that was about to expire :)
This recipe is simple and very delicious!
1/2 cup ricotta cheese
2 Tbsp. dark chocolate cream cheese (Philadelphia brand) *optional*
2 Tbsp. cacao powder
1 Tbsp. sugar substitute *optional*
1 tsp. vanilla extract
1 tsp. cinnamon
1 sprig of fresh mint
Combine all ingredients in a food processor or really good blender....and blend until smooth. You can also add a bit of coconut milk or almond milk to make it creamier.
By the way, the new Dark Chocolate Cream Cheese by Phildelphia is also great with chocolate tortilla chips (which can be found at Whole Foods and other specialty stores).
I usually eat this like a pudding.... but it also great as a fruit dip.
